Greetings from Forest Fungi in Athens, Ohio - we produce fresh and dehydrated culinary and medicinal mushrooms - no actives. The type of mushrooms that we grow are sometimes called "gourmet" mushrooms to distinguish them from psychoactive types. Our fresh and dried culinary and medicinal mushrooms are grown from sterile culture in a highly automated climate controlled environment, in steam sterilized bags of hardwood sawdust that would otherwise be burned or composted.
Our fresh, dehydrated, extracted, or freeze dried mushroom products are created by people with a passion for mycology and science, and an obsession with quality that starts with raw tissue, mycelium, or even just spores, and extends all the way to packaging, sealing, and labeling. We manufacture and package culinary alcohol and water extractions and tinctures for many mushroom species and variations, and if you are a reseller we can custom produce and package products to your specifications using specialized manufacturing and testing equipment in our USDA inspected lab. We also conduct mycology research projects, and build cost effective equipment solutions for the mycology industry. Our mycologist actively collects and clones useful local Appalachian specimens, and is building a genetics library that holds more than 50 species and variations, several of which are especially useful and prolific. Forest Fungi is a USDA registered and inspected food production and packaging facility, where our small staff first wash hands and clean everything that cannot be autoclaved in these sinks (or several others at our facility) with care and the proper sanitizers, wearing gloves and masks, hair and beard covers (and even little foot booties) to package our dehydrated, freeze dried, and powdered mushroom products. Lots of specialized equipment is needed in our lab to produce the best quality products, so the "clean and covered bunny suit look" is always in fashion at the Forest Fungi micro farm and lab. At last count we were using 40' linear feet of food grade stainless steel tables and carts and we have our eye on a few more! Cleaning from floor to ceiling is scheduled, regular and continuous! Its safe to say the Coral Tooth fungus (Hericium coralloides) is one of our favorites at Forest Fungi Culinary and Medicinal Mushrooms micro farm in Athens, OH USA. This fungus is a hardwood loving saprotroph and produces bunches of delicate branches, arising from a more or less central core that is attached to the substrate. Often after handing, they leave a fine dusting of white spores, leaving one's hands with a powdery feeling.
The coral tooth fungus is related to the Bears head tooth (Hericium americanum) and it’s more well known sister species Lion's mane (Hericium erinaceus).
Partly due to there unique texture, the coral tooth works very well as a seafood substitute with a texture that is often described as being similar to crab or lobster. It has a slightly sweeter flavor than Lion's Mane mushroom (H. erinaceus), and can turn pinkish when cooked! We like to crisp it up with a splash of olive oil, garlic, fine chopped onions, and a dash of celery salt, fresh cracked red and black pepper, and paprika to make a particularly delicious crunchy topping for a dish.
